Eggnog!

   Discussion: Eggnog!
renita · 20 years, 7 months ago
Okay holiday season is coming. this forum is to share recipes and ideas about what eggnog should be like. for instance, the eggnog my uncle always made was a cooked eggnog, I've recently learned that many are left raw. what do you think? eggnog, raw or cooked? I've been looking up recipes because I'm going to be making it this year. and most call for rum (normal) and some call for grand marnier and one called for whiskey! so. any tips? recipes? anything?

well, since you asked ;)

Cooked Egg Nog

6 Eggs
1/2 cup Sugar
1/4 tsp Salt
2 cups Milk
*2 cups Heavy Whipping Cream
1 tsp vanilla extract
*1 tsp rum extract
nutmeg

1. In a large saucepan, beat together eggs and sugar.
2. Stir in 1 cup milk and 1 cup heavy cream.
3. Cook over low heat, stirring constantly, until mixture is thick enough to coat a metal spoon with a thin film and reaches at least 160 F (or 70 C) since I don't have a cooking thermometer, I cooked it for 10 minutes... and stirring constantly is a must or else the egg will solidify as it cooks.
4. Remove pan from heat.
5. Stir remaining milk and heavy cream, plus vanilla and rum extracts into the mixture. Add a few dashes of nutmeg.
6. Cover and refrigerate until thoroughly chilled (overnight suggested). Just before serving, pour into a bowl or pitcher. as I have limited fridge space, I dumped it into a pitcher after cooking.

Yield: slightly more than 1 quart.
* Recipe originally called for 1 quart of milk. I opted for half milk and half cream to make it richer. I also added the rum extract to give it a bit of flavor kick. It rounds out the taste nicely, and is legal for all to drink :) (you could always add real rum, Brandy was traditionally used before sea-farers discovered the joy that is rum)
-- I didn't include the salt because... eww :P

hee. that looks good,

one thing I've discovered in the (seemingly) hundreds of recipes I looked at tonight, is that most of the recipes are 95% the same. *sigh*

I've got one, somewhere saved in my favorites folder that called for 15 eggs, I think I may merge yours and that one as yours seems a bit richer. mmm

I'm gonna need a lotta nog as the Christmas celebration is going to be for um. 13 people this year. all of us exchange students who aren't flying home and don't have family in europe are gathering at the home of our program director.

actualy, a wee bit of salt in sweet things is good, it helps bring out all the flavors.i watch food network a lot, so you guys are gonna feel the brunt of that in our many food forums.

A wee bit of salt brings out flavor in anything.

I know very few desserts that don't call for at least a teaspoon of salt.

I don't know from egg nog so I'll say how to make an egg cream

Fill a third of the glass with milk
Add Fox's Ubet till the glass is half full
Stir with a spoon
Fill the remainder with seltzer preferrably under pressure
Stir again

Important note, there are no eggs in an egg cream.
renita Back · 20 years, 7 months ago
what is Fox's Ubet?

I've wanted to try an egg cream ever since reading the Harriet the Spy books.

renita Back · 20 years, 7 months ago
hrm. maybe when I get home, we'll have to try a duck egg nog?
Andrea Krause Back · 20 years, 7 months ago

someday they'll find it...the duck egg connection...the noggers, allergics, and yoooou.

renita Back · 20 years, 7 months ago
heeheehee :)

Is is a brand of chocolate syrup. You can use any brand in a pinch but U-Bet is the best.
Mamalissa! Back · 20 years, 7 months ago
U-Bet with extra Prunt!
renita Back · 20 years, 7 months ago
do you know why it is called an egg cream?
nate... Back · 20 years, 7 months ago
A couple theories:

one, two

Heh, yet another culinary marvel invented by a jew.

Nononono!!! You add the seltzer BEFORE the Fox's! This is where there's skill involved... you have to add the pressurized seltzer to the milk so you get a nice *white* foam on top. Then you carefully pour in the Fox's and stir, making sure NOT TO BREAK THE FOAM! Lets see you do that!
Gordondon son of Ethelred Back · 20 years, 7 months ago
I had this conversation with you and you liked the brown foam. I guess I'm wrong. Your way looks prettier but doesn't taste as good.
danced with Lazlo Back · 20 years, 7 months ago
If I said that, it was out of laziness.

eggnog is the epitome of gross. in fact, it's beyond gross. it's nastitrocious. it's made from the blood of demons and it turns good little kittens into ravaging lions.
Annika Back · 20 years, 7 months ago
I accidentally drank eggnog recently, thinking it was soy milk. Eeww. Well.. wait, it was soy milk, but it was soy egg nog. I bought the wrong kind. Still.. eeww.
nate... Back · 20 years, 7 months ago
Soy milk??

Ewwww!!!!!!

*washes mouth out at the mere thought of drinking that stuff*
nate... · 20 years, 7 months ago
Though, I'm a big fan of the Hood kind... and no so much of other brands.

I have VERY little experience with homemade eggnog... but I'm sure it can be good.
Perhaps I'll try it this year. :)
renita Back · 20 years, 7 months ago
well, I have links to eight different recipes if you like.

all but one are of the cooked variety. I just can't get into drinking raw eggs. sorry.
nate... Back · 20 years, 7 months ago
Well, post 'em here, sistah!

:)
Bruce Rose Back · 20 years, 7 months ago

Has anyone else noticed that the recipes for uncooked eggnog look a lot like the recipes for French Toast batter?

I usually go the expensive route and buy it in cartons, since I'm lazy and there aren't many eggnog drinkers in the house. But the recipe I used called for either bourbon or rum... and they were listed as optional. Since I was living in a dry house at the time (and I was 13), we left it out.

Snarki_Fru Back · 20 years, 7 months ago

I haven't tried it yet, but Southern Comfort has a regular and Premium Egg Nog on the shelves. Part of the reason I started making egg nog at home is because I was drinking too much of it and its damned expensive Much easier to go to Sam's Club and buy a pallet of Eggs

I had a recipe from a Bed & Breakfast that I found online but now I can't find the website... must keep looking i guess.

Yvonne · 20 years, 7 months ago

1. Get some money.

2. Go to Loblaws.

3. Buy something more tasty. Like fresh apple cider. Mmm...it's great if you heat it up and put a cinnamon stick in it.

nate... Back · 20 years, 7 months ago
wow... am I the only one who was scanning quickly and saw number two as:

2. Get some blowjobs

renita Back · 20 years, 7 months ago
